Equipo Navazos La Bota 115 Fino is a single-vineyard fino drawn from Valdespino's Inocente solera in Macharnudo Alto.
Macharnudo is one of the four great pagos lying north and west of Jerez, and Macharnudo Alto is its highest and most celebrated section, with the purest albariza soils — a chalk known locally as Tosca de Barajuelas that limits yields and gives thick-skinned Palomino a fine, saline, structured character. Single-vineyard fino is now extremely rare, and this solera has supplied a long line of La Bota releases alongside the Inocente bottling itself. For No. 115, Eduardo Ojeda selected the oldest casks for complexity and the second criadera for freshness, then blended in younger criaderas from the same Macharnudo Alto holding. The wine ages biologically under a veil of flor, which shields it from oxygen and gives fino its pale colour and savoury cut. Average age here is close to eight years, a little younger than earlier editions, and the saca was drawn in August 2022.
Serve well chilled at 8–10°C, in a white wine glass rather than a copita, and treat it as a table wine. Oysters, anchovies, salted almonds, prawns and hard cheese all work.
