La Bota 118 Palo Cortado Pata de Gallina is a dry fortified white from Jerez de la Frontera in Spain, made from Palomino.
Palo cortado starts as a fino ageing under a veil of flor, loses the flor and then ages on oxidatively, which leaves a wine with an amontillado's nose and an oloroso's frame. Equipo Navazos bottles butts like this one under numbered La Bota releases; Pata de Gallina is the name carried by the butts behind number 118.
Expect an amber, completely dry wine, nutty and savoury, with the sort of length that rewards a small glass and a slow hour. Serve at 12 to 14 degrees with jamón, aged cheese, or consommé.
