Description
La Bota 121 Palo Cortado is a dry fortified white from Sanlúcar de Barrameda in Spain, made from Palomino.
Palo cortado begins life as a fino under a veil of flor, loses that flor somewhere along the way and finishes its ageing oxidatively in cask. The result sits between the two camps, with the aroma of an amontillado and the body of an oloroso, and it happens in only a minority of butts. Equipo Navazos picks out such butts and bottles them in numbered releases, of which this is 121.
Expect a dry, amber wine, nutty and savoury with a long finish and no sweetness at all. Serve at 12 to 14 degrees with jamón, aged cheese, consommé, or roast nuts.
