La Bota 124 Fino Amontillado is a dry fortified white from Montilla-Moriles in Spain, made from Pedro Ximénez.
Equipo Navazos works by picking out individual butts in established bodegas and bottling them as numbered La Bota releases, and this is number 124. A fino amontillado is a wine caught in transition: it has aged biologically under a veil of flor, as a fino does, and has started the oxidative ageing that turns a fino into an amontillado. In Montilla-Moriles the grape behind it is Pedro Ximénez rather than the Palomino of Jerez.
Expect something pale to amber, bone dry and nutty, with a saline bite and real length. Serve cold at 8 to 10 degrees in a proper wine glass, with almonds, olives, jamón, or hard sheep cheese.
