Description
La Bota 125 Amontillado Viejísimo Botas NO is a dry fortified white from Montilla-Moriles in Spain, made from Pedro Ximénez.
An amontillado begins under a veil of flor like a fino and then ages on oxidatively in cask once the flor has gone, which is where the colour and the nuttiness come from. Viejísimo simply means very old; no ageing period is published for this release and we will not put a figure on it. In Montilla-Moriles the grape is Pedro Ximénez rather than the Palomino of Jerez.
Expect a dark amber, bone dry wine, concentrated and nutty, with a long and slightly bitter finish. Serve at 12 to 14 degrees in small pours with aged cheese, jamón, or on its own after a meal.
