Description

La Bota 51 is a single-cask palo cortado drawn from the GF-30 solera, with an estimated average age of around 75 years.

Palo cortado sits between amontillado and oloroso: a wine that begins its life under flor and then loses it, finishing in oxidative ageing. This bottling comes from one butt within the GF-30 solera, named for Gaspar Florido, the Sanlúcar grower and sherry master who built it. The fruit is thought to have come from his Armijo lieu-dit in the Pago Miraflores and to have been fermented in cask. Equipo Navazos, the project run by Jesús Barquín and Eduardo Ojeda, works by identifying exceptional casks in the bodegas of the Sherry Triangle and bottling them unfiltered and unblended, and this solera belongs to the same old collection as the Bota NO, Bota Punta and Bota A. R. releases. Wines of this age are increasingly scarce in Jerez, and each release is limited to what a single butt holds.

Ready now, and stable in an opened bottle for weeks. Serve at 13–14°C in a copita, in small measures, with consommé, aged cheese or jamón ibérico.
