Description
La Bota 68 is a fino drawn from Valdespino's Inocente solera, fed by the chalk of the Macharnudo Alto pago, the most celebrated vineyard site in Jerez.
Macharnudo Alto sits on the high albariza of Jerez, and the Inocente solera has been the single-vineyard reference for fino for decades. Equipo Navazos bottle from a selected set of casks rather than the whole solera, and number 68 is a saca made in June 2016 from the same batch that produced the seven earlier editions of this wine, most recently number 54. The casks were chosen from the first and second criaderas, giving an estimated average age of ten to eleven years. Palomino grown on albariza is fermented dry, fortified to around fifteen degrees and aged under a living veil of flor, which shields the wine from oxygen and leaves the spent yeast on the bottom of the butt to give the wine its depth.
Serve well chilled at 8–10°C, in a white wine glass, with almonds, jamón, oysters or grilled prawns. Drink within a few days of opening.
