Description
La Bota 70 is a manzanilla pasada bottled from a selection of the best casks of the first criadera of the Misericordia solera, in magnum.
Manzanilla is the sherry of Sanlúcar de Barrameda, where the cooler, more humid Atlantic air keeps the flor yeast alive for longer than in Jerez. A pasada is a manzanilla left in the solera until the flor begins to thin, so the wine picks up oxidative depth while keeping its saline drive. Equipo Navazos select individual casks rather than blending to a house style, and this release drew on two toneles of ninety arrobas, 1,500 litres each, from the same Misericordia genealogy that produced La Bota numbers 10, 20 and 30. The average age is estimated at around thirteen years. The base is Palomino, fermented dry and lightly fortified before its long biological ageing under flor.
Treat it as a dry white at the table: serve at 11°C in a proper wine glass with rich fish dishes, charcuterie or truffled eggs, and finish the bottle within a few days of opening.
