Equipo Navazos La Bota 75 Palo Cortado Sanlucar is a rare thing twice over: an authentic palo cortado that is also single-vineyard and single-vintage.
Palo cortado sits between amontillado and oloroso, and genuine examples are scarce. This one comes from musts harvested in a single year in the Pago Miraflores at Sanlúcar de Barrameda, the same vineyard behind Equipo Navazos' Florpower wines. The musts were fermented in tank and spent only a brief period ageing under flor before being fortified and moved into sherry butts and barriques filled almost to the top, a tocadedos, to limit oxidation. Barrel ageing ran three and a half years, shorter than was historically usual for the style, and Navazos selected six botas for this first saca. The bottling strength is only eighteen per cent, low for a palo cortado, which is part of its delicacy.
Serve lightly chilled at 12–13°C in a white wine glass, and it will keep for some days once opened. Good with jamón, aged Manchego or a clear consommé.
