Equipo Navazos La Bota 76 Pedro Ximénez Jerez

Equipo Navazos La Bota 76 Pedro Ximénez Jerez is a very old PX from a twelve-butt solera in Sanlúcar, made in the Jerez rather than the Montilla manner.

Pedro Ximénez is barely planted in Jerez itself; the grapes are usually brought from Montilla-Moriles, sun-dried and pressed, then fortified early so the wine stays sweet. This solera rests in the Marqués del Real Tesoro bodega in Sanlúcar and was filled in 2000 with a stock of very old PX carefully selected from a small Sanlúcar producer that was closing down. It has been left untouched since, apart from two small withdrawals by Equipo Navazos; La Bota 76, drawn in July 2017, was the second of them, following La Bota No. 11. Average age is estimated at around thirty years. The wine was fortified to 18.5 per cent and aged in butts filled to only five-sixths of their capacity, deliberately leaving headspace so slow oxidation could work on it, and the alcohol has since fallen back to about 16 per cent.

Only a small pour is needed, and an opened bottle will keep for a long time. Serve on the cool side at 10–12°C, on its own or with chocolate desserts and coffee.
