Equipo Navazos La Bota 79 Viejo Cream Bota NO is a sweet oloroso drawn from a single cask within a nine-butt solera.
Equipo Navazos began as a group of sherry enthusiasts selecting exceptional casks from the cellars of Jerez and Sanlúcar and bottling them as they found them, numbered in the La Bota series. This release comes from a solera of nine butts labelled Viejo Cream, which had never been sold commercially beyond a few sacas for the British market, and within it from a single bota of markedly greater age and character. The sweetness dates from a blending with top-quality Pedro Ximénez carried out when the solera was laid down, probably more than a century ago. The base is oloroso from Palomino, aged oxidatively without flor. Long ageing has brought the raciness of a dry oloroso and the mellowness of fine PX into balance.
Serve lightly chilled at around 12°C in a small glass, in modest measures. It suits blue cheese, walnuts, dried figs or a dark chocolate dessert.
