Equipo Navazos La Bota 90 Manzanilla Pasada Capataz Cabo is a fourteen-year-average manzanilla from a solera of just fifteen casks.
Manzanilla is sherry matured in Sanlúcar de Barrameda, where the cooler, more humid Atlantic air keeps the veil of flor yeast alive through the year and gives the wine its saline, biological character. This solera had never been bottled until Equipo Navazos selected it in 2008 for its tenth La Bota release, followed two years later by the Bota Punta. Under the direction of Eduardo Ojeda, the fifteen casks have been managed by Capataz Cabo, one of the region's great cellarmasters, whose work the label commemorates. Two things set the style. The bulk of the Palomino comes from the pago Miraflores, Sanlúcar's finest vineyard, and the butts were filled almost to the brim through maturation, which limits headspace and yields only subtle oxidative complexity while lifting the alcohol to around 16.5 per cent. The pasada designation reflects an age at which the flor has begun to thin.
Drink it fresh from a newly opened bottle, in a proper wine glass at around 12°C, with rich fish dishes, charcuterie or scrambled eggs with porcini.
