Equipo Navazos La Bota 93 Manzanilla

Equipo Navazos La Bota 93 Manzanilla is the ninth release in the series' manzanilla line, bottled en rama from old casks in Sanlúcar.

Sanlúcar de Barrameda sits at the mouth of the Guadalquivir, and the damp Atlantic air there keeps the veil of flor alive all year; the result is manzanilla, which is fino by another name, finer in structure and more saline for its setting. The fruit is Palomino from Las Cañas, in the pagos of Balbaína and Las Tablas, and from La Soledad in pago El Cuadro. Equipo Navazos drew this saca in July 2019 from a small selection of 750-litre toneles and botas that Eduardo Ojeda's team had watched over for more than twelve years, by which point the estimated average age had reached about seven years, far beyond the norm for the style. As with every La Bota, there is no aggressive filtration before bottling, so the wine keeps the pale golden colour that cask-drawn manzanilla actually has.

Serve cold at 8–10°C and use it as you would a white wine through a meal. Roast chicken, pork sausage, olives and hard cheese are all comfortable matches.
