Equipo Navazos La Bota 95 Amontillado Sanlúcar is a Sanlúcar amontillado of around twenty-five years average age, drawn from a restructured solera at the old Rainera Pérez Marín bodega.
Amontillado begins under flor and continues oxidatively once the veil of yeast dies away, which is where its combination of pale-wine freshness and nutty depth comes from; in Sanlúcar de Barrameda the humid Atlantic climate keeps the flor active longer and the wines are finer-boned than those raised in Jerez. From the 1980s until around fifteen years ago the Amontillados of Rainera Pérez Marín were assembled from several soleras within the cellar, from the third criadera of Amontillado to the small 1/3 Viejísima and the 1/10 M. Pda. Vieja solera. After 2007 those stocks were strictly restructured: the finest and deepest butts were selected and refreshed with true, unfortified Manzanilla Pasada to form a single Amontillado solera of a little over a hundred butts. Navazos took a dozen of those butts nearly ten years ago; more than half of that wine went back into cask for further ageing, and this bottling is the result.
Serve it in a large white wine glass at around 15°C. It works as an aperitif on its own, and equally with rich meat dishes, spicy Asian food and both hard and soft cheeses.
