Description
This is a very old Pedro Ximénez, aged in Jerez rather than in Montilla and bottled exclusively for Australia.
Pedro Ximénez is made by drying the grapes in the sun before pressing, so that the must is already intensely sweet before fortification halts fermentation almost at once. The fruit here was grown around Montilla, in the towns of Montalbán, Montemayor and Puente Genil, but the wine has been aged in Jerez de la Frontera, in a solera of twenty-two casks that Equipo Navazos puts at twenty years and more, or perhaps twenty-five, since the solera system does not allow precision. The casks are filled only to five-sixths of capacity, a Jerezano practice that increases contact with air and yields a less fruity, earthier and more savoury PX than the Montilla norm. This saca was drawn in July 2018 at 16.5 per cent alcohol, from a solera never previously bottled.
Serve lightly chilled at around 12°C in very small measures, with blue cheese or dark chocolate, or poured over vanilla ice cream.
