Equipo Navazos PX Gran Solera 25+ YO is an unfiltered Pedro Ximénez drawn from a 22-cask solera at Jerez de la Frontera, bottled in September 2021.
Eduardo Ojeda and Jesús Barquín founded Equipo Navazos to bottle casks from the region's rarest and most neglected solera systems, and the La Bota series made them a cult name among sherry drinkers. Alongside it they curate a small group of less exclusive en rama bottlings under the plain Equipo Navazos label, of which this is one. Pedro Ximénez grapes are sun-dried to raisins before pressing, and the resulting intensely sweet must is fortified before fermentation can take hold, then aged oxidatively through a solera. Here the average age is at least twenty and probably closer to twenty-five years, as the solera system makes precision impossible. The source, identified as Solera Pedro Ximénez NO, had never been bottled before 2016. Casks are filled to only five-sixths of their capacity in the Jerezano manner, which produces a less fruity, earthier and more savoury PX than most.
Ready now, and an opened bottle will keep for months. Serve lightly chilled at 12–14°C in small measures, with blue cheese, dark chocolate, or poured over vanilla ice cream.
