Eric Bordelet Sydre Argelette 2023

Eric Bordelet Sydre Argelette is the estate's top cider, made from old cider apple varieties grown on schist.

Argelette takes its name from the dark schist that underlies part of Eric Bordelet's orchards at Charchigné, on the Normandy and Mayenne border. The cuvée blends a large number of traditional bittersweet and bittersharp cider apple varieties from the oldest trees, farmed organically and biodynamically and picked as they fall. Juice is pressed and fermented slowly on indigenous yeast through the winter, then bottled with its own residual sugar so the fine bubble forms in bottle rather than by carbonation. Nothing is added, and the finished cider sits at around 5% alcohol with a dry, tannic and savoury profile.

More like a still wine than a soft drink; serve it at cellar temperature with roast chicken, pork, or washed rind and Normandy cheeses.
