Eric Bordelet Sydre Nouvelle Vague is a drier, more sparkling Normandy cider bottled in a 330 mL format.
Nouvelle Vague is Eric Bordelet's more energetic cider, drawn from the same organically and biodynamically farmed orchards at Charchigné on the Normandy border, where old bittersweet and bittersharp cider apple varieties grow on schist and granite. The apples are pressed and fermented on their own yeasts through a long cold winter, and the cider is bottled before fermentation finishes so the carbon dioxide is entirely its own. It is left drier and more vigorous than the estate's Brut Tendre, finishing at around 6% alcohol.
Crisp, bracing and dry, this is a cider for oysters, fried food, galettes and charcuterie; serve it very cold straight from the bottle.
