Ester Bees Knees

Ester Bees Knees is a bottled gin cocktail, a take on the prohibition-era Bee's Knees.

The original is gin, honey and citrus. At the Marrickville distillery, Felix and Corrina have pushed it further with yuzu sake, and then lined the inside of the bottle with beeswax. As the cocktail sits, it draws the lipids out of that wax, which builds layers of honey character against the sour citrus. Because the honey and wax carry the character of the season, every batch tastes a little different: a smoky note one year, a tropical one in a wet, busy year for the bees. It is bottled at 24.5 per cent, and it is one of the more singular things made in Australian spirits.

Sweet, oily and sour all at once, with honey weight and a sharp citrus cut. Serve it as cold as you can manage, in a coupe straight from the freezer or over a big block of ice. For something longer, top it with tonic for a spritz.
