Ester Dry Gin

Ester Dry Gin is a Sydney-made dry gin bottled at 43 per cent.

All-in distillation is the method: every botanical goes into the still together, which gives a more integrated result than distilling elements separately and blending them. The frame is classic London Dry, with juniper, coriander, liquorice root, angelica, orris, cardamom, clove and cassia, and the local additions are what make it recognisable: finger lime, lemon myrtle, macadamia, sweet mandarin peel and pepperberry. The macadamia in particular gives an unctuous texture that is unusual in gin. It comes off the still at a well-judged 43 per cent and goes into bottle unfiltered. Made in Marrickville, in the inner west of Sydney.

Juniper, coriander and liquorice root lead with dry spice and a herbaceous bite, then earthy finger lime and lemon myrtle, with sweet mandarin lifting the finish. It makes a serious Martini and a very good Negroni, and it holds up in a G and T with a slice of grapefruit.
