Ester Mandarin Gimlet

Ester Mandarin Gimlet is a bottled gin gimlet made with the distillery's own mandarin cordial.

Two ingredients, both made in Marrickville: Ester Dry Gin, and a cordial built from whole mandarin, skin included, with acid and sugar balanced against it. That is the whole drink, batched at the right dilution so it can be poured straight from the freezer. Using the whole fruit means the peel oils do as much work as the juice, which is why it smells of gin and citrus oil instead of squash. The juniper and coriander seed come forward at this dilution, which is the opposite of what most bottled cocktails manage.

Straight up and very cold, around minus ten degrees, is how it is meant to be served. On the palate there is a sweet-sour tang with herbal body and real generosity. It also works long with soda or topped with prosecco, which makes it a good outdoor drink.
