Ester Negroni

Ester Negroni is a prebatched Negroni bottled at the distillery in Marrickville.

Felix Clark went into spirits looking for the right gin for a Negroni, so this bottling carries some weight. It is equal measures of Ester Dry Gin, Campari and Cocchi Vermouth di Torino, which he rates as the best vermouth on the market when you can get hold of it, plus twenty per cent filtered water to stand in for the melt of a long stir over ice. That last detail is what most prebatched cocktails get wrong. Poured blind, this is very hard to identify as anything other than one built in front of you.

Straight from the fridge or freezer, around minus fifteen degrees, though any colder and it will start to freeze. Bitter orange, red fruit and a deep herbal finish. There is enough concentration to lengthen it with soda or tonic over ice if you want something lighter.
