Ester Old Tom Gin

Ester Old Tom Gin is a Sydney take on the sweeter, older English gin style.

Old Tom sat between Dutch genever and the dry London style in the eighteenth century, and most modern versions get their sweetness from added sugar. This one does not. The base is a triple citrus gin of mandarin, sweet orange and lemon, with lemon verbena bringing a sherbet-like brightness and jasmine flower adding a soft floral thread, alongside juniper, liquorice, angelica, orris, coriander, cassia, cardamom, lemon myrtle and macadamia. What sweetness there is comes from the distillate itself, which is why it tastes silky instead of syrupy.

Soft, sweet and silky, with citrus sherbet up front and flowers behind. It will turbocharge a Tom Collins or a Martinez, and it makes a gentler, softer-focused Gin and Tonic than a dry gin does. Serve it cold with plenty of ice and a slice of orange.
