Ester Strong Gin

Ester Strong Gin is a navy-strength gin from Sydney, bottled at 57 per cent.

Navy strength is not simply the same gin with less water. To carry 57 per cent, the Marrickville team dials up juniper, finger lime and lemon myrtle so the botanicals hold their ground against the alcohol, and what comes out is viscous and layered instead of merely hot. Florals and spice sit over a base of citrus and pine, with savoury notes running underneath and no single element standing out, so the texture is the thing you notice. It has been called a gin geek's gin, though there is nothing precious about it: it exists to make cocktails.

The strength means it holds its shape in a drink where a 40 per cent gin would vanish: a Negroni, a Gimlet, a Martinez, a sour with plenty of citrus. In a Gin and Tonic, go long on ice. Neat, it wants a chilled glass and a small pour.
