Description
Etienne Brana Poire William is a pear eau-de-vie from the French Basque country, in the far south west of France.
The Brana family is based at Saint-Jean-Pied-de-Port in the Basque Pyrenees, where Etienne Brana established a distillery and later replanted vineyards in the Irouleguy appellation, helping to revive winegrowing in a corner of France where it had almost disappeared. The Poire William is made from Williams pears, which are fermented and then distilled; it takes a great quantity of fruit to fill a single bottle, which is why good pear eau-de-vie has always been an expensive thing to make. Unlike a brandy it is not matured in wood, being rested in neutral vessels instead, and it belongs to the long tradition of fruit distilling found across the Pyrenees, Alsace and the Alps.
Serve chilled in a small glass after a meal, or poured over poached fruit.
