Fabien Duveau Saumur blanc Bois du Chêne is a dry Chenin Blanc from a named parcel on the Brézé hill, offered in magnum.

The hill of Breze, south of Saumur, is the most celebrated site for Chenin Blanc in the appellation: a mound of Turonian tuffeau limestone capped in places with clay and flint, historically divided into walled clos and long recognised as the source of the region's most structured whites. Bois du Chene is one of the named parcels on that hill. Limestone at this depth gives the grape a firm acid spine and a chalky, saline finish, and the wines are usually whole bunch pressed, fermented with indigenous yeast and raised on fine lees in seasoned barrel or larger wood so that the site is not masked by oak.

Dry, firm and built to age, it suits turbot, scallops, roast chicken and hard cheese; serve at 11 to 12 degrees and decant a young magnum.
