Fabien Duveau Saumur-Champigny Les Hauts Poyeux is a Cabernet Franc from the upper part of the Poyeux slope, planted in 1980.

Les Hauts Poyeux is the higher section of the Poyeux vineyard in Saumur-Champigny, where the covering of sand and clay is at its thinnest and the tuffeau limestone lies close to the surface. Sites like this ripen Cabernet Franc slowly and give wines with tight, chalky tannin and good acidity rather than obvious flesh. Fabien Duveau's vines here were planted in 1980 and are farmed organically. The grapes are hand picked, fermented with indigenous yeast and extracted gently, then raised in older wood for an extended period so that the structure settles without the wine taking on oak character.

Taut and savoury, it belongs with roast veal, lamb, duck and mushroom dishes; serve at around 16 to 17 degrees.
