Faiveley Nuits-Saint-Georges 'Les Saint-Georges' Premier Cru comes from the vineyard that gave the town its name, and which many argue should have been made a grand cru.
Nuits added Saint-Georges to its name in 1892, borrowing it from the vineyard that had been its most admired site since the Middle Ages. Les Saint-Georges sits at the southern end of the commune, on a steep, stony slope beneath the ridge, and a formal application to elevate it to grand cru has been pursued by its owners for years. Faiveley is among the largest holders of the climat and has been based in the town since 1825, passing through seven generations of the same family. Erwan Faiveley took charge in 2005 and oversaw a move to gentler handling in the cellar.
Decant an hour ahead and serve at 16 to 17C with game, roast beef, duck or mature hard cheese; it asks for time and rewards a decade or more.
