Vincisgrassi (Traditional Marche Layered Pasta Bake)
Ingredients:
- 250g fresh lasagne sheets
- 300g beef mince
- 200g pork mince
- 150g chicken livers and giblets, finely chopped
- 2 tbsp extra virgin olive oil
- 1 onion, finely chopped
- 1 carrot, finely diced
- 1 celery stalk, finely diced
- 2 garlic cloves, minced
- 150ml dry white wine
- 400g crushed tomatoes
- 500ml béchamel sauce
- 80g Parmigiano Reggiano, grated
- Salt and cracked black pepper
Instructions:
- Heat the olive oil in a large pot and gently sauté the onion, carrot, celery and garlic until softened.
- Add the beef, pork and chicken giblets and cook until browned and fragrant.
- Pour in the white wine and allow it to reduce.
- Stir in the tomatoes and simmer gently for 1½–2 hours until the ragù is rich and concentrated.
- Spread a thin layer of ragù in a baking dish, then add layers of pasta, béchamel, ragù and Parmigiano.
- Continue layering until all ingredients are used, finishing with béchamel and Parmigiano.
- Bake at 180°C for 40-45 minutes until golden and bubbling.
- Allow to rest for 15 minutes before serving.
