Fervor Burning Violins Pinot Noir is a cool-grown Western Australian Pinot Noir from the Great Southern.

Pinot is fussy. It wants a cool, even season to hold on to its perfume, and in Western Australia the coastal country around Denmark and Albany is one of the few places that delivers. The Southern Ocean keeps summers mild there, so ripening is slow and steady. Careful handling and a light hand with oak suit the fine-boned, fragrant wines it gives.

Fragrant and lighter in frame, with fine tannins and fresh acid. Pour it a touch cool, 14–16°C, with duck, roast chicken, salmon or mushroom risotto. Drink now or over the next few years.
