Fervor Dokta Nova Riesling 2026

Fervor Dokta Nova Riesling is a bone-dry Great Southern white built on high natural acid and bright citrus.

Closed state borders in 2021 gave Mike and Callum Garland a reason to start making wine together. The father and son work out of Denmark, on the state's far south coast, with Mike in the cellar and Callum looking after the vines. Free-run juice is cool-fermented in tank. The pressings go into old French barriques, which lends a little texture without any oak flavour.

Lemon rind, lime leaf and pink grapefruit come through first, over a chalky minerality and a faint bitter twist like quinine. The finish is long and dry, and while young the wine can feel almost spritzy. Try it at 7–9°C with freshly shucked oysters, cured kingfish, a Vietnamese salad or hot chips.
