Tian de Légumes Provençal (Layered Vegetable Bake)
Ingredients:
- 1 eggplant, thinly sliced
- 2 zucchinis, sliced
- 2 tomatoes, sliced
- 1 onion, sliced
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp herbes de Provence
- Salt and pepper, to taste
Instructions:
- Preheat oven to 180°C. Lightly grease a baking dish.
- Sauté garlic and onion in olive oil until soft. Spread in the bottom of the dish.
- Layer eggplant, zucchini, and tomato slices alternately in rows.
- Drizzle with olive oil, sprinkle with herbes de Provence, salt, and pepper.
- Cover with foil and bake for 30 minutes. Uncover and bake 15 more minutes.
- Serve warm with a glass of Fontanet Rouge for a classic southern French pairing.
