Fontodi Chianti Classico Gran Selezione 'Pastrolo' is a powerful and finely detailed expression of Sangiovese from the heart of Panzano in Chianti, one of Tuscany’s most revered terroirs. Crafted by the renowned estate, this wine reflects the estate’s commitment to organic farming and precision winemaking, capturing both the warmth of the vintage and the structure of its high-altitude vineyards.
Made predominantly from Sangiovese, this is a medium-bodied red with depth and intensity balanced by freshness. Expect layers of dark cherry, plum and dried herbs, alongside notes of tobacco, spice and a touch of earthy minerality. The tannins are firm yet polished, giving the wine both immediate appeal and the ability to evolve beautifully over time.

Pici al Ragù di Cinghiale (Pici Pasta with Wild Boar Ragu)
Ingredients:
- 400g pici or thick spaghetti
- 500g wild boar mince or pork mince
- 1 carrot, diced
- 1 celery stalk, diced
- 1 onion, chopped
- 400g canned tomatoes
- 1 glass red wine
- 2 cloves garlic, minced
- Olive oil, salt and pepper
- Fresh rosemary and bay leaf
Instructions:
- In a pot, heat olive oil and sauté garlic, onion, celery, and carrot until soft.
- Add the meat and brown well. Pour in the red wine and reduce.
- Add tomatoes, rosemary, bay leaf, salt and pepper. Simmer for 1.5–2 hours.
- Cook pici until al dente, then mix with the sauce.
- Serve hot with Fontodi Chianti Pastrolo for a rich Tuscan pairing.
