Forest Hill Vineyard Block 5 Cabernet Sauvignon 2021

Forest Hill Vineyard Block 5 Cabernet Sauvignon is an elegant, medium-weight Cabernet from a single block of the estate's Mount Barker vineyard.

Cabernet Sauvignon was one of the original varieties planted at Forest Hill in the 1960s, when the vineyard helped open up the Great Southern as a wine region. Block 5 is one of the estate's single-block releases, bottled separately to show its particular site. The cool Mount Barker climate gives Cabernet fine tannins and savoury detail. In 2021 the supplier describes blackcurrant, black olive, bay leaf and clove aromas, with dark fruit, lavender and spice along an elegant, fine tannin line.

Decanting helps if opening it now. Serve at 16 to 18 degrees with roast lamb, beef fillet or aged cheddar, or cellar it for some years yet.
