Forest Hill Vineyard Highbury Fields Cabernet Sauvignon is an approachable, dark-fruited Cabernet from Western Australia's Great Southern.

Forest Hill's story begins in the mid-1960s, when its Mount Barker vineyard became one of the first commercial plantings in the Great Southern, a region now respected for cool-climate Cabernet and Riesling. The Highbury Fields range is the estate's more approachable tier, made for drinking young while still showing regional character. Cabernet from this part of the state tends to pair ripe dark fruit with herbs and fine tannins. The supplier notes plum, cassis and dried herb aromas, with blackberry, mulberry, dark chocolate and cedar on the palate and a line of fine tannin giving length.

Open it with a steak, lamb cutlets or a Sunday roast, at around 16 to 18 degrees. It drinks well now and will keep for a few years.
