Forest Hill Vineyard Highbury Fields Sauvignon Blanc is a crisp, zesty Sauvignon Blanc from the Great Southern of Western Australia.

Cool nights and ocean breezes in the Great Southern help Sauvignon Blanc keep its fresh acidity and herbal edge, giving a style quite different from the riper, more tropical wines of warmer areas. Forest Hill, established at Mount Barker in the 1960s, bottles this under its approachable Highbury Fields label. The 2025 is fresh and lively, with nettle, lemongrass, citrus and passionfruit pith aromas, and a crunchy palate of ripe citrus, guava and fresh herbs held together by a wet stone, pithy line.

Best served well chilled on a warm day with fish and chips, a herby green salad, goat's cheese or Thai fish cakes.
