Freycinet Cabernet Sauvignon Merlot 2019

Freycinet Cabernet Sauvignon Merlot is a cellar-worthy Bordeaux-style blend from one of the founding vineyards of Tasmania's east coast.

The vineyard lies in a sheltered, bowl-shaped fold of land between Swansea and Bicheno, first planted by the Bull family in the late 1970s and still in family hands today. That natural amphitheatre traps warmth and shields the vines from wind, which is why this stretch of coast can ripen Cabernet Sauvignon, something few Tasmanian sites manage. Cabernet Sauvignon is joined by Merlot and Cabernet Franc, and the wine spent an extended period maturing in French oak barriques. The 2019 is deep ruby with cassis, plum, liquorice and black olive, framed by savoury oak and fine, silty tannins, and it is built for a long life in the cellar.

Open it at around 16 to 18 degrees and give it an hour in a decanter. It suits slow-roasted lamb shoulder, rare beef or a mushroom and barley braise, and the winery suggests it can be cellared for up to 20 years.
