Garagiste Merricks Cuvée de Coeur 2022

Garagiste Merricks Cuvée de Coeur is a traditional-method Blanc de Noirs sparkling from Mornington Peninsula Pinot Noir.

Only the second release of this wine, following the 2018, and the source is the same top Merricks block that gives the table wines. Picking for the sparkling base happens about two weeks earlier, because Barney Flanders wants the acidity without surrendering flavour. Whole bunches were pressed slowly and sent directly to old barriques for a wild ferment with no temperature control, then kept on full solids for ten months. Bottled in January 2023, the wine spent 30 months on lees before disgorgement in June 2025 with three grams per litre of dosage. Later disgorgements will show more complexity again.

Barely tinted, finely perfumed, with red apple and raspberry over chalk and a long dry finish. Energetic acidity, plenty of mineral. Serve at 8 degrees as an aperitif, or bring it to oysters, salt-and-pepper squid or a bowl of olives.
