Garagiste Merricks Cuvée de Coeur Sparkling 2018 Disg. Aug 2022

Garagiste Merricks Cuvée de Coeur Sparkling, disgorged in August 2022, is a Blanc de Noirs from Mornington Peninsula Pinot Noir held long on lees.

This is the third disgorgement of the 2018, and the differences between releases are the whole point. Base wine came off a generous season, whole-bunch pressed to old barriques for a wild ferment without temperature control and held on full solids for eight months. In bottle it accumulated 46 months on lees, ten more than the second release, and that extra time brought enough weight and concentration to justify cutting the dosage to a single gram per litre, down from 1.75. The house character holds; the palate simply carries more richness than it did before.

Pale, dry and savoury, with baked apple, red berry and toasted brioche from the long lees ageing. Fine bead, bone-dry close. Pour at 8 to 10 degrees. It handles food well: roast chicken, gougères, or a plate of prosciutto.
