Garagiste Merricks Pinot Gris 2024

Garagiste Merricks Pinot Gris is a copper-tinged Mornington Peninsula Pinot Gris with a small carbonic component.

Twenty-eight-year-old vines face north-east on the grey loam and red ferrosol that runs through Merricks, and the fruit that comes off them is picked with texture in mind. Most of the crop goes to press as bunches and into old puncheons with full solids, where it stays on lees, while a tenth of the blend ferments carbonically for three weeks. That second parcel is the interesting one: it supplies spice, a flash of red fruit, the blush of colour and the fine-boned structure. Whole-bunch pressing handles the rest, capturing stone fruit and floral perfume.

Pure-fruited, perfumed and savoury, with waves of nashi pear and citrus, a spicy undertow and a nippy texture that makes the glass empty fast. Drink it at 11 degrees with grilled quail, dumplings or a salad of fennel and prosciutto.
