Description

Giant Steps Applejack Vineyard Chardonnay comes from a high site in the Upper Yarra Valley.

The Applejack vineyard sits at around 300 metres in Gladysdale, where the Upper Yarra's grey clay loams over volcanic subsoil and its cooler, wetter conditions make for a late harvest and taut, linear whites. Giant Steps was founded at Healesville in 1997 and now bottles each of its vineyards separately. The fruit is whole-bunch pressed, fermented with wild yeast in French oak, and matured on lees with minimal new wood.

Serve at 12 degrees with oysters, white fish or a simple roast chicken. It develops over six to eight years.
