Gosset 12 Ans de Cave a Minima Brut is a Champagne held at least twelve years in the house cellars before release.
Gosset was founded at Ay in 1584 and is the oldest wine house in Champagne, now based in Epernay. Its defining choice is to block malolactic fermentation, keeping malic acidity intact so the wines stay taut and reward long cellaring. As the name states, this cuvee spends a minimum of twelve years in the cellar, an extreme length of lees ageing for a house bottling and far beyond the fifteen months required for non vintage Champagne. Because malolactic fermentation is blocked, the malic acidity survives that long rest and holds the wine together, so what develops is depth of pastry, nut and dried fruit character rather than flabbiness. The blend follows the house pattern of Chardonnay and Pinot Noir with a small share of Pinot Meunier, and it is disgorged only shortly before shipment.
Mature, savoury and still firm, it belongs at the table with roast poultry, mushrooms, veal and aged hard cheese; serve at around 10 degrees.
