Description
Gosset Celebris Extra Brut is the prestige cuvee of the oldest wine house in Champagne, a blend of Chardonnay and Pinot Noir.
Gosset was founded at Ay in 1584 and is the oldest wine house in Champagne, now based in Epernay. Its defining choice is to block malolactic fermentation, keeping malic acidity intact so the wines stay taut and reward long cellaring. Celebris is the prestige cuvee of the house, declared only in exceptional years and drawn from a small selection of the finest crus. It is bottled extra brut, with a dosage low enough that the wine has nowhere to hide, and given an extended rest on lees in the chalk cellars well beyond the three year minimum for vintage Champagne, before late disgorgement. That combination of low dosage and long ageing is what allows Celebris to be released mature and still taste tight.
Long, dry and deeply savoury, it belongs with lobster, turbot, sweetbreads and truffle dishes rather than as an apertif; serve at around 10 degrees.
