Grosset Rockwood Wild Shiraz 2022

Grosset Rockwood is a Clare Valley Shiraz fermented entirely with the yeasts present on the fruit.

Wild fermentation runs more slowly and less predictably than an inoculated one, and it is used here to add texture and savoury complexity rather than as a technical convenience. The Rockwood vineyard lies on the organically farmed western ridge of the Clare Valley, where broken rock and shallow soils hold vigour in check. The wine is matured in seasoned French oak so that structure rather than wood carries it.

Serve at 16 degrees with grilled meats, slow-roast lamb or a lentil dish. It will develop over a decade.
