Guffens-Heynen Mâcon-Pierreclos Le Chavigne is a single-vineyard Chardonnay from the village where the domaine has its cellars.
Pierreclos lies in the hills west of Mâcon, a little back from the Pouilly-Fuissé escarpments, on clay and limestone that gives Chardonnay of good weight without the density of the grander appellations. Jean-Marie Guffens and Maine Heynen founded the domaine here in 1979 and have kept it small, working on very low yields and picking late by local standards. Le Chavigne is bottled as its own cuvée rather than blended into a village wine. The fruit is whole-bunch pressed, fermented with indigenous yeasts and raised in barrel, then bottled without fining or filtration.
Drink over the next five years or so, with roast chicken, grilled fish or a mild washed-rind cheese. Serve at 10-12°C.
