Guffens-Heynen Pouilly-Fuissé 1er Jus Des Hauts des Vignes 2017

Guffens-Heynen Pouilly-Fuissé 1er Jus Des Hauts des Vignes is a first-press Chardonnay from the upper slopes of the domaine's Pouilly-Fuissé holdings.

The Pouilly-Fuissé vineyards climb the limestone slopes below Solutré and Vergisson, and the higher parcels ripen later and hold more acidity than those on the flat. Guffens-Heynen, the domaine Jean-Marie Guffens and Maine Heynen built from a handful of hectares, farms these sites on severely restricted yields and harvests by hand at full maturity. The 1er Jus designation refers to the first-run juice from a slow whole-bunch pressing, kept apart from the rest. The wine ferments with wild yeasts and is raised in barrel on lees, then bottled without fining or filtration in the concentrated, tightly wound style the estate is known for.

Give it several years and serve with roast poultry, grilled crayfish or a firm alpine cheese at 10-12°C.
