Description

Guffens-Heynen Pouilly-Fuissé C.C is one of the small parcel bottlings from Jean-Marie Guffens' Mâconnais domaine.

Pouilly-Fuissé sits at the southern tip of Burgundy, its Chardonnay grown on limestone slopes beneath the rock faces of Solutré and Vergisson. Guffens-Heynen is a very small estate with a large reputation, built on low yields, late picking, whole-bunch pressing and long barrel ageing with wild yeasts, and on bottling without fining or filtration. The domaine splits its holdings into separate cuvées rather than making a single appellation wine, so each bottling reflects a particular set of parcels and a particular pressing. Jean-Marie Guffens also runs the négociant house Maison Verget from the same base at Vergisson.

Best given a few years in bottle; serve with roast chicken, richer fish dishes or comté at 10-12°C.
