Guffens-Heynen Pouilly-Fuissé C.C 2017

C.C is the assemblage of two parcels, La Côte and Carmentrans, on the western flank of the Roche de Vergisson, and the initials are all the label gives away.

Pouilly-Fuissé sits at the southern tip of Burgundy, its Chardonnay grown on limestone slopes beneath the rock faces of Solutré and Vergisson. Guffens-Heynen was founded by Jean-Marie Guffens and Maine Heynen after they left Belgium for Vergisson in 1976, and remains around 5.65 hectares across Vergisson, Pierreclos and Davayé, of which a little over a hectare lies in Pouilly-Fuissé. La Côte and En Carementrant both lie beneath the rock on its western side, on limestone, and their blend gives the cuvée its name. The domaine's vineyard work is deliberately restrained, a single shallow ploughing a year and mown cover crops, with yields held to around 30 to 40 hectolitres per hectare. Grapes are hand-picked in several passes, pressed slowly with the juice fractions kept apart, fermented with indigenous yeasts and raised on lees in a mix of oak and concrete without filtration.

Best given a few years in bottle; serve at 10-12°C with roast chicken, richer fish dishes or comté.
