Guffens-Heynen Saint-Véran 1er Jus 2017

Guffens-Heynen Saint-Véran 1er Jus is a first-press Chardonnay from the appellation that wraps around Pouilly-Fuissé in the southern Mâconnais.

Saint-Véran covers a scatter of communes on either side of Pouilly-Fuissé, on limestone and clay-limestone slopes that generally give a lighter, more direct wine than its neighbour. Guffens-Heynen approaches it no differently from the rest of the range: very low yields, hand picking at full ripeness, and a slow whole-bunch pressing from which only the first-run juice goes into the 1er Jus bottling. Fermentation is with indigenous yeasts and the wine is raised in barrel, then bottled without fining or filtration, which is standard practice at the domaine.

Drink over the next five years or so, with grilled fish, chicken or a soft washed-rind cheese. Serve at 10-12°C.
