Guffens-Heynen Saint-Véran 1er Jus 2017

Guffens-Heynen's Saint-Véran 1er Jus is drawn from the first-run juice of two of the domaine's parcels at Davayé, Le Clos de Poncetys and Les Combes.

Saint-Véran covers a scatter of communes on either side of Pouilly-Fuissé, on limestone and clay-limestone that generally gives a lighter, more direct wine than its neighbour. Guffens-Heynen holds about a hectare of it at Davayé, split between three parcels of differing soil and exposure. The domaine was founded by Jean-Marie Guffens and Maine Heynen, who arrived from Belgium at Vergisson in 1976 and bought their first vines at Pierreclos three years later, and it has stayed at around 5.65 hectares since. Farming is minimal: one shallow ploughing a year, cover crops mown rather than sprayed, no de-leafing, and yields around 30 to 40 hectolitres per hectare. Picking is late and made in several passes, pressing is slow on a modified Coquard press, and the 1er Jus takes only the first-run juice. Fermentation is with indigenous yeasts, ageing is on lees, and the wine is not filtered.

Drink over the next five years or so, with grilled fish, chicken or a soft washed-rind cheese. Serve at 10-12°C.
