Description
Guffens-Heynen Saint-Véran is the domaine's standard bottling from the appellation neighbouring Pouilly-Fuissé in southern Burgundy.
Saint-Véran was created in 1971 and takes in several communes around Pouilly-Fuissé, its Chardonnay planted on limestone and clay-limestone that tends to produce a fresher and more immediate wine than the grander appellation next door. Guffens-Heynen, founded by Jean-Marie Guffens and Maine Heynen at Vergisson, keeps yields very low, picks by hand and late, presses whole bunches, ferments with wild yeasts and raises the wine in barrel before bottling it unfined and unfiltered. The estate's Saint-Véran is generally the most approachable of its wines, without being any less carefully made.
Drink now and over about five years, with grilled fish, roast chicken or goat's cheese. Serve at 10-12°C.
