Guffens-Heynen Saint-Véran 2017

This is Guffens-Heynen's straight Saint-Véran, assembled from the domaine's three parcels at Davayé rather than from a single plot or pressing.

Saint-Véran was created in 1971 and wraps around Pouilly-Fuissé on limestone and clay-limestone slopes that tend to produce a fresher, more immediate wine than the grander appellation next door. Guffens-Heynen holds roughly a hectare at Davayé across Le Clos de Poncetys, Les Combes and Les Carettes, each with its own soil type and exposure, and this multi-parcel bottling brings them together. The domaine was founded by Jean-Marie Guffens and Maine Heynen, Belgians who settled at Vergisson in 1976 and bought their first vines at Pierreclos in 1979, and it has stayed small at about 5.65 hectares. Farming is deliberately hands-off, with a single shallow ploughing a year, mown cover crops and yields around 30 to 40 hectolitres per hectare. The grapes are hand-picked in successive passes, pressed slowly, fermented with indigenous yeasts, aged on lees in a mixture of barrel and concrete and bottled without filtration.

Drink now and over about five years, with grilled fish, roast chicken or goat's cheese. Serve at 10-12°C.
