Hay Shed Hill Block 2 Cabernet Sauvignon 2023

Hay Shed Hill Block 2 Cabernet Sauvignon is a powerful single-block Margaret River Cabernet from the estate's Wilyabrup vineyard.

Wilyabrup is widely regarded as prime Cabernet country, with gravelly loam soils and a maritime climate that ripens the grape fully while keeping its structure intact. Block 2 is a distinct parcel within the estate vineyard, and its fruit is kept apart for this label. The wine shows the dusty, earthy side typical of the region's Cabernet alongside intense ripe berry fruit. By Western Australian standards it is a big wine, with a fleshy mid-palate and ripe, smooth tannins giving length and shape, and there is plenty still to unfold with time.

Give it an hour in a decanter if opening young, and serve at around 16 to 18 degrees. Slow-roasted lamb shoulder, a rib-eye off the grill or aged cheddar are all good matches, and it has the depth to reward careful cellaring over the next decade.
